Ingredients:

4 cups fresh corn kernels (about 4 ears of Jersey corn, husked and kernels cut off)

1 cup cherry tomatoes, halved

1/2 red onion, finely diced

1/2 cup cucumber, diced

1/4 cup fresh cilantro, chopped

1/4 cup crumbled Mt.Vikos feta cheese 

For the Dressing:

3 tbsp hickory smoked olive oil

2 tbsp white wine vinegar

1 tbsp honey 

1 tsp Kozlik’s Dijon mustard

Salt and freshly cracked black pepper, to taste

1/2 tsp garlic powder (optional, for extra depth)

Instructions:

  1. Prepare the Corn:

    • Bring a large pot of salted water to a boil. Add the fresh corn (still in the husks) and cook for 5-7 minutes, until the kernels are tender. Alternatively, you can grill the corn for a smoky flavor.

    • Once cooked, remove the corn from the water or grill. Let it cool slightly before slicing off the kernels.

  2. Assemble the Salad:

    • In a large mixing bowl, combine the corn kernels, cherry tomatoes, red onion, cucumber, and cilantro.

  3. Make the Dressing:

    • In a small bowl or jar, whisk together the hickory smoked olive oil, Bianco vinegar, honey, Dijon mustard, garlic powder (if using), and salt and pepper. Adjust the seasoning to taste.

  4. Toss and Serve:

    • Pour the dressing over the salad and gently toss to coat all the ingredients. If desired, sprinkle crumbled feta cheese over the top for an added creamy bite.

  5. Chill and Serve:

    • For best results, let the salad sit in the fridge for at least 30 minutes to allow the flavors to meld. This also helps the corn soak in the smoky and tangy dressing.
